Full Moon Amatriciana

Quick and easy, this simple dish is packed with great flavour and a subtle heat.

  • 1 tin chopped tomatoes
  • 1/2 small onion
  • 1 teaspoon Full Moon
  • 3 tbsp olive oil
  • 160g pancetta cubes
  • Sea salt
  • Black pepper
  • Heat the oil in a frying pan, add the¬†onion and cook until soft but not coloured
  • Add the pancetta and cook until golden
  • Stir in the Full Moon
  • Add the¬†tomatoes, season with salt & pepper, mix well and cook over a low heat for 15 mins

Serve with al dente pasta and sprinkle with freshly grated parmesan.
